Schmackary's inspired Maple Bacon cookies!


To celebrate my 21st birthday, my friend Rosy & I went to NYC! It was an incredible experience. Jam-packed with sight seeing, Broadway shows and delicious food. One of the places on the top of my list to visit was Schmackary's cookie shop on West 45th & 9th Ave! I would have tried every flavour if I could! But instead I just sampled a Fluffer Nutter (which inspired these cookies of mine... Fluffer Nutter Recipe) and a Schmackary's favourite... a Maple Bacon cookie. Now I'm home and missing New York. I decided to try to recreate this cookie on my own! 



 

Maple Bacon Cookies
Ingredients
2 rashers of bacon
1 tbsp maple syrup
140g plain flour
1/4 tsp baking powder
3/4 tsp salt
60g unsalted butter
50g granulated sugar
40g dark muscavado sugar
1 small egg
45ml maple syrup
85g milk chocolate chips

Method
1. Preheat the grill. Place the bacon in a dish and cover with 1 tbsp of maple syrup. Grill for 10 minutes, turn the bacon over and then continue cooking for another 10 minutes until crispy. Leave to cool on a wire rack and then cut into tiny pieces.
2. Preheat the oven to 160 fan. Cream the butter and sugars together. Add the egg and mix. Drizzle in the maple syrup and mix. Add the flour, baking powder and salt. Stir to incorporate all of the flour. 
3. Add the chocolate chips and maple bacon. Leave the dough to rest in the fridge for 12-24 hours. 
4. Divide into 12 and bake for 15-18 minutes until dark golden brown in colour.


I tried my best to recreate Schmackary's delicious creation, while adding my own flavours. (The chocolate chips are my idea!) To achieve a totally authentic cookie I would have left out the chocolate and only made 6 giant cookies, rather than 12 smaller ones. I can't wait to go back to NYC to see more shows and try more cookies! X Bo
