Spontaneous Banana Bread

Firstly, a huge apology for slacking! Christmas was absolutely mad and I haven't really baked anything worth blogging about! However, this past weekend the girls and I had a sleepover at my friend Cathy's house. While helping her prepare dinner, she asked me to make a banana bread. I was given this recipe from BBC Food, the ingredients and a beautiful kitchen to work in. Because we were feeling a bit naughty, we added a bag of chopped Thorntons Viennese Truffles, which made the loaf gooey and chocolately. 

Ingredients
285g plain flour
1 tsp bicarbonate of soda
1/2 tsp salt
110g butter
225g caster sugar
2 eggs
4 ripe bananas
85ml buttermilk
1 tsp vanilla extract
100g chocolate
Method
1. Preheat the oven to 180. 
2. Cream butter and sugar together until light and fluffy. Add the eggs, mashed bananas, buttermilk and vanilla. Mix well.
3. Fold in the flour and bicarbonate of soda. Add the chopped chocolate.
4. Line a loaf in with grease proof paper and pour the mixture into the tin.
5. Bake for about an hour or until well risen and golden brown. 
6. Leave to cool in the tin for a few minutes, then turn out onto a wire rack to cool completely before serving.
