Lemon and Coconut cakes

Today called for a batch of 'Good-Luck' cakes. So I did some research and found a recipe for a low calorie lemon and coconut cake. I changed it a little bit. Instead of one big loaf a made four little loaves and a few cupcakes because... Why not! If my calculations are correct, each cake is roughly 270 calories. I used my trusty dry measure, which has cups on it to weigh my ingredients. But there are lots of handy websites which show cups vs grams.

Lemon and Coconut loaf/cup cakes
Ingredients
For the cakes
1/2 cup (113g) butter
1 cup sugar
2 eggs 
4 and 1/2 tsp lemon juice
1 and 1/2 plain flour
1 tsp baking powder
1/2 cup milk
1/4 cup desiccated coconut 
1 tsp lemon zest

For the glaze
1/4 cup icing sugar
2 tbsp lemon juice

Method
1. Preheat the oven to 160. Cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the lemon juice. 
2. In another bowl combine the flour and baking powder. Add half to the creamed mixture, then half the milk. Stir in the rest of the flour and the rest of the milk. Stir in the coconut and lemon peel.
3. Pour into mini loaf tins and cup cake cases (makes 4 loaves and 6 cup cakes) Bake for 15-25 minutes (the loaves need longer) Remove from the oven and drizzle with the glaze while the cakes are still warm. 

























Ta da! I put thin strip of foil backed grease proof paper in the bottom of each loaf tin so they are easy to lift out once cooled. They were very light and totally yummy! X Bo
