Fluffernutter cookies!

In New York, there is a cookie shop called Schmackary's. Their cookies look amazing so I decided to try to copy some of their flavours... This week FLUFFERNUTTERS! Which is Marshmallow Fluff and Peanut Butter! I made some as a post-run-snack for my friend Gail and myself!

Ingredients
250g smooth peanut butter + 6 tsp 
6 tsp marshmallow fluff
150g granulated sugar
1 egg
1/2 tsp baking powder
1/4 tsp salt

Method
1. Line two baking trays with baking paper. Spoon half a teaspoon of peanut butter onto a plate then spoon half a teaspoon of marshmallow fluff on top. With wet hands, roll into balls, you need 12 in total. Put the plate in the freezer for 20 minutes.
2. Preheat the oven to 170 (150 fan) Combine the 250g peanut butter, sugar, egg, baking powder and salt together in a bowl. Chill in the fridge for 10-15 minutes until it's more firm and easy to handle. 
3. Divide the mixture into 12 pieces. Flatten out a little and place the frozen ball in the middle and cover with dough so that none of the centre can be seen. Place 6 on each tray. Bake for 15 minutes until golden brown.
