Black Forest Chocolate Cake

This weekend marks the birthday of my Work-Mum, Alison! With the help of my lovely colleagues and some sneaky espionage, I found out that she really loves cake. Specifically, Black Forest Gateaux. I have concocted a cheat's version which still looks fabulous and tastes delicious.

Ingredients
For the cake

280g sugar
220g plain flour
90g cocoa
1 tsp baking powder
1 tsp bicarbonate of soda
a pinch of salt
2 eggs
1 cup milk
1/2 cup vegetable oil
1 cup boiling water
For the decorations
150g butter
330g icing sugar
3 tsp water
250g cherry jam
strawberries, raspberries, blueberries and cherries

Method
1. Preheat the oven to 170. Mix all of the dry ingredients together in a bowl.
2. Add the wet ingredients, one at a time, mixing after every addition.
3. Grease and line three cake tins. Divide the mixture between all three. Bake for 20-25 minutes.
5. Beat the butter for the buttercream in a bowl. Add the sugar and cream together.
6. Spread the bottom cake with a third of the buttercream and half of the jam. Place the second cake on top and repeat with the second third of buttercream and remaining jam. Lastly, place the third cake on top and cover with buttercream. Arrange the berries on top.
